Mole Pastes: 3 ea 8 oz jars
In various earthy colors and flavors, mole pastes contain a myriad of ingredients common in Oaxacan markets but are quite labor intensive to make. We removed the bread from our formula in respect to those with gluten free diets. Reconstituted with roasted tomatoes and stock, a chef or home cook can easily use this paste to create a memorable meal in no time at all. For further complexity, add fried plantains, onions, garlic and fried bread slices if desired.  Seasons of My Heart brand Black Mole Paste, Mole Coloradito Paste and Red Mole Paste can be used in the traditional manner for serving with chicken, enchiladas or tacos or added as a secret flavoring paste to stews, chilies or marinades!

Chintestle (Smoked Mole Paste): 5 oz jar
A traditional Oaxacan paste made from smoked, toasted and ground chile pasillas, a chile variety unique to Oaxaca. The chile paste is blended with roasted garlic and sea salt to make a seasoning base for almost any dish.  No need to reconstitute as a sauce, instead use as a marinade ingredient for poultry or vegetables by adding orange juice, olive oil and honey to the paste.  Create spicy salsas in minutes by adding it to roasted tomatillos or tomatoes. Enhance the flavor of beans or stews to produce a rich smoky flavor. Add a little to mayonnaise or béchamel sauce. This vibrant and spicy chile paste is excellent for vegetarian cooking.

Pepper Jellies: 3 ea 8 oz jars
Our mixed chile jellies are made with a mixture of fresh chile jalapeños, chile canario, the famed chile de agua chiles and bell peppers grown in the Oaxacan sunshine. They are simmered in vinegar and sugar to make rich, hot and sweet combinations.  Create a delicious appetizer by pouring over goat cheese or mix with cream cheese and serve with your favorite breads or crackers.  Also great used in dressings or marinades or added to a quick sauté of vegetables, Asian food or even in pasta dishes. Spice up your bar skills by adding some jelly to your favorite cocktail.  Comes in green, red, and yellow varieties.

Oaxacan Sea Salt:  8 oz tube
Salinas de Marquéz is a salt flat on the edge of Salina Cruz in the Isthmus of Tehuantepec in Southern Oaxaca. As the north winds blow off the Sierra Madres in January, the natural evaporation process starts and continues for several months. It is the birthright of those from the village to hand harvest and grind the salt, making their living off the natural salts of their lands. Susana says: “This salt has changed my cooking forever, I love the flavor and the texture of it and I cannot recommend this sea salt enough…”It tastes like the sea from which it came, is a white, crunchy grind, and is used by great chefs as a finishing salt.
