This Red Mole Paste is based on the pre-hispanic sauce mülli. It has less ingredients than the other pastes but has more chile flavor. Traditionally served with pork, chicken, beef, or venison, it is also used to make Pozole Mixteco or as a base for beef marinades. It is reconstituted with ripe tomatoes to make a fine sauce to use for tamales or enchiladas.

Seasoning pastes in various earthy colors and flavors containing a myriad of ingredients are common in Oaxacan markets but are quite labor intensive to make. We removed the bread from our formula in respect to those with gluten free diets. Reconstituted with roasted tomatoes and stock, a chef or home cook can easily use this paste to create a memorable meal in significantly less time. For further complexity, add roasted tomatillos, fried plantains and fried bread slices if desired.  Seasons of My Heart brand Black Mole PasteMole Coloradito Paste and Red Mole Paste can be used in the traditional manner or added as a secret flavoring paste to stews, chilies or marinades!
